This standard describes a procedure for the identification and quantification of added adulterant sugars in honey samples. This standard applies to the botanical varieties of acacia, chestnut and polyflower honey, and allows to identify additions of exogenous sugars such as corn/malt syrup, inulin and invert sugar, in concentrations higher than 10% (w/w). The standard is based on the analytical technique of Nuclear Magnetic Resonance (NMR) which allows the identification and quantification of added sugars.
